Cooking for Kids

As my life keeps progressing and changing, so does the food that I make. A recipe for super simple slider would never have been something I made in the past but now is a recipe that excites me to no end.

When I was younger, a pop tart and a soda were a perfectly fine breakfast. When I was newly married, breakfast was stacks of homemade pancakes, fruit salad, and fresh squeezed orange juice. Now that I have kids, cereal and milk or microwave waffles will do. It’s amazing how food can reflect phases in your life!

That trend carries over to the social side of life as well. Gone are my days of drinking all night around a bonfire and going to work the next morning looking chipper! Parties now are usually at a parent-friends house, surrounded by kids running and playing while the adults compare horror stories about what their children did that week (mine refuses to eat anything except purple gummy bears, how about you?).

This new suburban type of party has definitely had an effect on my culinary game. I have always felt and still feel that it is necessary to show up to someone’s house with homemade food, especially when they are hosting my rambunctious kids. However, I don’t always have time to make something fancy.

Fancy also isn’t always the way to go when serving parents and kids. You need a universal food that everyone will love. Something simple to make, delicious and appealing to both adults and kids. It also helps if the food smells delicious as it bakes and doesn’t look too intimidating when it is on a plate (a plain colored, bread-like food won’t scare too many kids away!). All of these factors came together and that is how this slider recipe was born.

Ground Beef Sliders with Pillsbury Grand Biscuits

Recently, I was going to a family friendly party and wanted to bring some kind of food to help out. With limited time and ingredients, I rounded up some Pillsbury biscuits, ground beef and cheese from my fridge. Perfect! Beef and biscuits sounded like I was on the right track! Kids love biscuits and adults love burgers! If I can combine the two, I’ll have a total win on my plate.

Rather than making basic beef patties and using the biscuits as burger buns, I wanted something a little different. So I cooked up the ground beef and set it aside then I flattened the biscuits to be about 1/2 their normal thickness. I scooped some of the ground beef right on top of the biscuit, topped it with some shredded cheddar cheese and wrapped the biscuit around the filling, pinching the top closed. Done.

This whole process took me about ten minutes and I was even able to stop a few times, check on my kids who were playing hide and seek in the other room and then go back to cooking. Not only did I have some cute little beef pockets but the ground beef was nicely hidden- a great trick for feeding picky kids and getting them to eat some protein in a sneaky way!

After about 25 minutes in the oven, my little beef sliders smelled amazing. I wrapped them up and off we went to the party! Needless to say, the sliders were a total hit! I saw kids grabbing them off the tray and eating them as they ran around, adults were taking three at a time and I was happily dipping mine in ketchup as I marveled at how something I threw together in a matter of 5 minutes could be so tasty.

Choosing the Best Ground Beef

While I wouldn’t exactly consider this recipe the healthiest one in my arsenal (although here is a good amount of protein inside these sliders!), I do try to use the best ingredients I can. Choosing the best ground beef available is definitely something you should try to do when shopping for the ingredients to make this recipe.

While organic ground beef is always good, you can also look for beef that is labeled as grass fed. Grass fed beef is naturally lower in fat, has more vitamin E and A and a better ratio of Omega 3 and Omega 6. Not only is it healthier but it is also a more humane and natural way to raise cattle for consumption. It makes these sliders a little better for you and you will feel good eating them!

If you can’t find any grass fed or organic beef, look at the percentages on the label to learn how much fat versus lean beef is in the meat. If the beef is labeled as 20/80, this means that there is 20% fat and 80% lean beef. When looking for a healthier beef, try to find a 5/95 beef or 10/90 which has less fat and more lean meat. Your sliders will taste amazing when you use a nice lean meat! Your diet will also stay on track when you pick a leaner option so it is definitely something to consider when making this recipe!

Storing the Sliders

These super simple sliders are best when eaten right away, hot out of the oven, but that doesn’t mean you can’t prepare them ahead of time. You can completely assemble the sliders and then wrap them well, unbaked, and freeze. When you are ready to eat the sliders. Take them out of the freezer and place them right onto a sheet tray. Bake as directed but add 5 minutes to your baking time.

Clearly you want to make a big batch whenever you make these and freeze some for later! It is the perfect dinner to whip up when you are in a rush and it is completely homemade so you can feel good about serving it to our family.

A Simple Hamburger Biscuit Recipe for Any Occasion

I now make these sliders all the time: at home, for parties, and even to take on picnics, they are perfect! I have tried to go back to my earlier days of ‘fancy’ food and occasionally I will mix some spices into the ground beef (a little garlic powder, some Worcestershire sauce, maybe a diced onion). I even stuffed the biscuit with ground beef and blue cheese once which I loved, but my kids completely rejected.

Some of my ‘creative’ variations include:

  • Ground beef cooked with taco seasoning, biscuits stuffed with sliced jalapenos
  • Diced tomato and avocado inside with the beef
  • Sprinkle cheddar on the outside of the biscuits before cooking
  • Add some sliced jalapenos for a spicy slider
  • Pear and brie inside as a sweet and savory treat
  • Ground turkey instead of ground beef

Overall, I have found this slider recipe is best when kept simple (especially when I intend to feed them to kids). It is fast, takes little effort, is inexpensive and is delicious. Why mess with perfection?!

So while life may change my cooking habits, I feel like this recipe is here to stay. I mean, everyone loves it and I love making it! Perfect for any phase of life, any time of day and so easy that even the most novice chef can make them. You should definitely give this slider recipe a try.

Ingredients

  • 1 can Pillsbury Grands refrigerated biscuits
  • 1lb cooked ground beef
  • 8oz of shredded cheese (any kind works!)

Instructions

  1. Preheat oven to 350(F) degrees. Flatten each biscuit to desired thickness on a baking sheet. Place a spoonful of hamburger and shredded cheese on each flattened biscuit. Wrap biscuit up and over meat and cheese then pinch the top closed.
  2. Bake for approximately 20 minutes or until the biscuit is slightly browned. Serve immediately.

Notes

  • This recipe that really stands out when you use nice, fresh oven baked biscuits. We use the Pillsbury Grands biscuit which are inexpensive, in most grocery stores and delicious.
  • We used shredded cheese in our recipe, but any kind of cheese works great.
  • Try ground turkey or ground chicken for variety
  • Think of the recipe as a regular burger and season the meat as you would for your favorite burger recipe. Stuff the biscuits with your favorite burger toppings, the sky is the limit for combinations!
  • These do reheat well but are definitely best eaten on the day they are baked.
  • Store in an airtight container in the fridge for up to four days.
  • You can pre make the sliders and freeze them when you are at the stage where the filling is inside and you have pinched the biscuit closed. Wrap them and freeze. Bake from frozen as you would if they were fresh but add 5 more minutes to your cooking time
